Key Revenues and Expenses Food and Beverage

Food and beverage gross profit has been set at 67% which we are currently achieving year to date for 2017. This is maintaining bar promotions throughout 2018 and the platinum lunch club which is £6.50 for 2 courses.

Wages and salaries The budget includes an increase across the board of 2% and with the introduction of new forecasting sheets to ensure wages are kept within the budget an overall percentage of 44 will be achieved including pension contribution for 2018
