Food and beverage sales Sales within the bar and restaurant area are based on a figure of 58% throughout the year. Currently monitoring has shown that we are feeding over 60% of all in house guests. Food Gross profit is budgeted at 68% and beverage Gross profit is at 70% for the year of which we are currently achieving. Conferences The budget figure is based on existing bookings and historical conference bookings generated during these months the conference market currently tails of during the summer months due to the number of weddings and events taking place.
